On November 6, the SALT Restaurant Innovation Conference returns to the Parkovy Convention & Exhibition Center for the third time.

This year’s central theme is “Fulcrum”: the event will focus on sector analysis, challenges, opportunities, trends, and the ideas and solutions that can help businesses navigate yet another crisis.

At a time when experts increasingly speak of unprecedented headwinds, SALT aims to be a space for a frank conversation about the state of the market—and to create opportunities for networking, synergy, and new partnerships.

Speakers include: Mykhailo Beilin (LaFamiglia), Serhii Reshetnyak (Domino’s Pizza), Pavlo Kozhukhar (METRO), Nastia & Sasha Varava (Varfamily), Olena Bebko-Minayeva (Rose family), Mykhailo Mykoliuk (Glovo), Yuliia Chesnokova (Food & Success), Serhii Chaika (GetOrder), and others.

  • Talks and panel discussions will span a wide range of topics: from business automation and dynamic pricing to restaurant trends and new delivery segments; from pizza market analytics to modern team management; from women’s leadership to social responsibility and innovative approaches to hospitality.
  • A Q&A session is planned with Mykhailo Beilin, co-founder of LaFamiglia Restaurants, LaFamiglia Catering, and Kyiv Food Market. The conversation will cover both the specifics of operating in the premium segment and the company’s new vectors, including social and corporate catering.
  • A dedicated pizza market panel will present fresh analytics on market size, trends, and prospects, with insights from Domino’s Pizza CEO Serhii Reshetnyak, METRO CMO Pavlo Kozhukhar, and other market insiders.
  • Mykhailo Mykoliuk, Commercial Director of Glovo in Ukraine, will present delivery-market analytics and spotlight new segments and opportunities.
  • Strategist and futurist Andrii Dlihach, founder and chair of Advanter Group, will deliver a talk on human capital and the future of hospitality. Yuliia Chesnokova, founder of Food & Success and the Future Bites platform, will share trends to watch in 2026.
  • Nastia and Sasha Varava will take us behind the scenes of the Varfamily restaurant group: developing teams amid a talent crunch, operating in Dnipro and Nice, social projects, and hospitality as a system for building communities.
  • Olena Bebko-Minayeva, co-owner of Odesa, Spicy NoSpicy, and Buty Sofie, will address women’s leadership and discuss the challenges and prospects of a restaurant company run by three generations of women.
  • Serhii Chaika, entrepreneur and HoReCa automation expert, founder of GetOrder.Biz, will talk about dynamic pricing, AI-driven procurement planning and menu optimization, as well as technology solutions that reduce costs and increase operational efficiency.

SALT, like all Hoteliero projects, includes a social component: a system of support for Superhumans, the national center specializing in prosthetics, reconstructive surgery, rehabilitation, and psychological support for those affected by the war.
